ABOUT

Established in 1903, we are a fifth-generation fish paste maker based in Fukuoka.
Using domestically sourced fresh fish, we meticulously produce fish paste and fish cake products using traditional methods. Our surimi, which has received recognition from the Minister of Fishery, is featured on menus of esteemed restaurants and eateries throughout Japan. Our processed products are popular as souvenirs and gifts.
In 2012, we began exporting to international markets.
In 2019, our initiative to recycle fish scraps generated during the fish paste manufacturing process and produce fish sauce was recognized as an environmentally friendly practice.
In 2021, we obtained United States HACCP certification for our seafood processing facility.

Premium Ingredient “Eso”

Hakusui Ichiban’s main focus is the fish used as ingredients. We exclusively use “eso,” a fish highly regarded for its quality, as the ingredient for our fish cake products. These eso are caught off the shores of Hakata, and sourced from local markets. We oversee every step from fresh fish processing to the final product at our in-house facility. While many Japanese fish cakes are made from imported frozen ingredients, Hakusui’s products stand out with the use of domestically sourced fish.

Using the “Stone Mortar Method” for 400 years

Using the traditional stone mortar method, our craftsmen meticulously kneaded fish paste while adding seasonings. This preserves the fish’s natural umami, resulting in delicious fish paste.

Natural Spring Water

Our factory is located in an area known for its pristine water. Hakusui products are made using natural spring water. We conduct weekly water quality tests to ensure safety.
